Matzo Balls & Chicken Soup

I'll show you how to make the very best classic chicken soup and matzo balls using my #techniquenottorture methods. We'll cook the soup and make the matzo balls during the first two hours, then we'll take an hour break while the soup finishes cooking. In the last hour, we'll come back together to strain the soup and pack everything for the fridge to be ready for your seder(s)! Join me!  We'll have so much fun together!



Equipment: cutting board; chef's knife; medium and small mixing bowl; wet and dry measuring cups; measuring spoons; hand mixer; rubber spatula; stockpot/Dutch oven; ladle; slotted spoon; tongs; strainer/colander with cheesecloth (or china cap/chinois)


Ingredients: (1) 4-pound chicken, 6 chicken feet or one dozen chicken wings, 2 onions, 3 tablespoons kosher salt, 2 whole carrots, 2 whole celery stalks, ½ bunch fresh parsley, 1 bunch fresh dill, 4 large eggs, 3 tablespoons chicken fat, 2 tablespoons chopped dill, ½ teaspoon ground white pepper, 1/3 cup seltzer, 1 cup matzo meal

Gefilte Fish & Horseradish

Once you taste homemade gefilte fish and horseradish you'll never be able to go back to the jar. In this class, we'll make gefilte fish from scratch using an even mix of pike, whitefish, and carp.  A can of beets and a fresh horseradish is the base of the beet-stained horseradish featured on every Passover table. You'll need a food processor, a soup pot, and a good local fish monger to sell you the fish (ask for the weight to be gross and tell them to send you the heads/tails/bones)!  I'll show you every #techniquenottorture tip and trick to make the best gefilte fish you've ever had! 



Equipment: cutting board; chef's knife; peeler; can opener; food processor; large mixing bowl; mezzaluna; stiff spatula; cheesecloth; soup pot; slotted spoon; large spoon


Ingredients: 1 can whole or sliced beets; one horseradish root; honey; sugar; cider vinegar; kosher salt; black pepper; white pepper; 2 pounds whitefish, 2 pounds carp; 2 pounds pike; 5 large onions, 5 eggs, 2 large carrots

Chopped Liver, Charoset, & Hummus

Learn to make these three classic Jewish spreads just in time for your Passover seder(s). The chopped liver will be chicken, the charoset will be Ashkenazi, and the hummus will be classic. Grab your matzo and let's have some fun gearing up for the holiday! 



Equipment: cutting board; chef's knife; strainer; can opener; food processor; rubber spatula; large and deep sauté pan; small saucepan with tight-fitting lid; small mixing bowl; dry and wet measuring cups; measuring spoons


Ingredients: 1 pound chicken liver, 4 large onions, 2 eggs, 1/4 cup chicken fat, kosher salt, black pepper, 2 cups drained chickpeas (one can), 2 lemons, 2 garlic cloves, 2 tablespoons tahini, 2 teaspoons ground cumin; 2 apples, 1 cup walnuts, grape juice or Manishevitz wine; cinnamon 

Passover Desserts: Macaroons, Marshmallows,
& Matzomars

Join me for two hours of fun the day before the first Passover seder to make some delicious kosher-for-Pesach treats: homemade coconut macaroons, from-scratch marshmallows, and "matzomars" (a semi-homemade ILOC riff on a Mallomars). You'll have enough treats to last all of Passover week, and you'll love them so much that you'll want to make them all year long. 



Equipment: cutting board, small serrated knife; rimmed sheet pans; wax paper; parchment paper or silicone liner; offset spatula; small and large mixing bowl; fork; measuring spoons; wet measuring cup; dry measuring cup; measuring spoons; small saucepan, candy thermometer; standing mixer or hand mixer; heatproof rubber spatula; 9x9 glass pan or silicone tray; sifter or miniature strainer 


Ingredients: 3 packages (¼-ounce each) unflavored gelatin, 1½ cups granulated sugar, 1 cup light corn syrup, kosher salt, vanilla extract and/or the seeds of one vanilla bean, confectioners' sugar, 4 matzo squares or a box of matzo crackers (such as Tam Tams), 1 cup of marshmallow Fluff or Jumbo marshmallows, 3 cups semi-sweet or dark chocolate chips or melting wafers, 14 ounces unsweetened desiccated coconut, 14 ounces sweetened condensed milk, 3 large egg whites, sprinkles or edible confetti for decorating 

Matzo Brei Two Ways

You might think you know matzo brei one way, but I'm here to show you two ways: the classic scramble, and the matzo-meal dipped shallow fry. Whether you like your brei sweet or savory, for breakfast or brunch, with cinnamon-sugar or chopped liver, you'll learn the skills to make versatile brei for a lifetime. 



Equipment: cutting board; serrated knife; baking dish or rimmed sheet pan; mixing bowls; fork; offset spatula 


Ingredients: chicken fat; vegetable oil; butter; matzo; matzo meal; eggs; half and half
